What’s for dinner?
If that’s the question asked like every night as in my house, this MASON JAR SIMPLE SEASONING MIX will come in handy when you’re in a crunch and can’t seem to figure out what to do with that chicken staring back at you. It has a great shelf life – it doesn’t last more than a few weeks on my house!)
Don’t sweat it. Here is the foolproof recipe!
MASON JAR SIMPLE SEASONING MIX
4 TBSP of Adobo (find it in the Goya aisle)
3 TBSP of Salt
3 TBSP of Black Pepper
3 TBSP of Garlic Powder
3 TBSP of Onion Powder
Add all ingredients to a mason jar and mix well. Apply a generous amount to a whole chicken, chicken breast or fish and marinate. It even works great to cook right away. See below for an easy foolproof baked chicken recipe.
Foolproof Moist & Delicious Baked Chicken Recipe:
5-6 lb. Whole Chicken
3 tbsp. of MASON JAR SIMPLE SEASONING MIX
1 tsp. of MILD Jerk Seasoning
8 oz. can of Goya (Spanish Style) Tomato Sauce
Preheat oven to 375.
Coat a 5-6 lb. Chicken evenly with 3 tbsp. of MASON JAR SIMPLE SEASONING MIX + 1 teaspoon of MILD Jerk Seasoning (I do mean mild! – you don’t want this favor to overwhelm your chicken) and rub all over. Making sure to get some of this seasoning in between the breast and skin in order to add flavor evenly and throughout the whole chicken. I also add a good amount (about 2 tbsp.) inside the cavity.
Place seasoned chicken in deep roasting pan, add 2 tbsp. of water to pan and cover completely with foil.
Bake for 2 hours, then remove foil. Add a small can of Goya tomato sauce directly into pan and combine well with pan drippings. Baste chicken with tomato sauce and return uncovered chicken to oven for 10 minutes. Repeat last step one more time to get that rich golden brown finish.

*Baked chicken goes well with so many side dishes. I mostly serve this baked chicken with sweet and/or russet potatoes that I add mid way through the baking process (as seen in the image). Asparagus or spinach is a great accompaniment to this dish as well.
